Homemade Greek Gyros with Tzatziki

These homemade gyros will be your new favorite lunch or dinner. They’re packed with flavor, super customizable and filling.

Honestly, everything about these gyros are delicious. The warm, grilled pita. The fresh, crunchy veggies. The perfectly cooked protein. Ugh, it’s all so good!!


What I really love though is how customizable this recipe is. You can use any protein you like. I chose to use Beyond Meat crumbles to mix it up a bit (read more about my thoughts on meat alternatives here). Other delicious options would be ground chicken, ground turkey, ground beef, or even crumbled tofu or tempeh.

If you’re using a different animal protein, simply make sure to cook it until it reaches a safe internal temperature, typically around 160 F.

And, if you don’t have an air fryer, no worries! I recommend cooking your protein in a pan with some oil so you get that same crispness on the outside.

Make these for lunch or dinner - and make sure to make extras! Cook your protein ahead of time, chop your veggies and then store everything in the fridge until you’re ready to eat. Once you are, assemble your gyros then. We love a meal that lasts for a few days!

 

TOP TIPS

  • Whole wheat pita: I actually used whole wheat naan here! I love how big the surface area is and how fluffy it is. Keep it easy - use your favorite store-bought pita.

  • Olive oil: You know the drill - if you’d prefer a different oil or butter, go for it.

  • Protein: Again, I used Beyond Meat crumbles, but the choice of protein is totally up to you. Seriously, any will work. If you’re using animal protein, I like ground protein in this recipe simply because it’s easy to cook. You can add salt, pepper and any herbs of your choice before cooking, too.

  • Tzatziki: Again, store-bought is great here! If you’re up for making your own, simply mix plain Greek yogurt, lemon juice, olive oil, grated cucumber, salt and pepper. Play around with the amounts! You can’t mess up, promise :)

Homemade Greek Gyros with Tzatziki

Ingredients

  • 4 whole wheat pitas
  • 1/4 cup olive oil
  • 1 lb ground protein of choice (I used Beyond Meat)
  • 2 roma tomatoes
  • 2 mini cucumbers
  • 1/2 red onion
  • 1/2 cup tzatziki
  • Fresh dill
  • Salt
  • Pepper

Instructions

  1. Brush pita with olive oil and place on a pan or grill pan until warm. Set aside.
  2. Add protein to air fryer and sprinkle with salt and pepper. Air fry for about 12 minutes, or until cooked through and a safe internal temperature is reached (this will vary by protein!). Halfway through, using a wooden spoon, break up the protein into smaller pieces.
  3. While protein is cooking, slice tomato, cucumber and onion. Chop dill. Set aside.
  4. Assemble gyros: top each pita with 2 tablespoons tzatziki, tomato slices, cucumber slices, red onion slices and protein. Top with fresh dill.
