Banana Chocolate Chip Oaties

 
 
 

I used to make these oaties allll the time, and somehow, totally forgot about them. It wasn't until I had a few extra ripe bananas on hand that I remembered to make them again… and now they’ll definitely be added frequently to my rotation. They have only 3 main ingredients and make a perfect make-ahead breakfast or snack. Did I mention that they’re almost too easy to make?!

This recipe is so easy that it can barely even be called a recipe. You pretty much just mix mashed, ripe bananas, oats and chocolate chips together and then bake them. Seriously, that’s it. Just four main ingredients. If you’re feeling a little fancy (read: feel like taking an extra .5 seconds), you can also add cinnamon and vanilla extract to make these taste even better.

Not only does peanut butter add a delicious flavor, but it also adds a nice boost of healthy fat and protein, making these even more filling and satisfying as a snack. Grab 1 for a snack or even for dessert - I promise, they will not disappoint.

I’ve been having a few for an afternoon snack with a little bit of peanut butter all this week. It tastes SO good and most importantly, actually keeps me full until dinner. It’s a great thing to keep on hand for the week. Store these oaties in an airtight container in the fridge or pantry for 3-5 days.

Ingredients

  • 2 ripe, mashed bananas
  • 1 cup oats
  • 1 teaspoon cinnamon
  • 1/2 - 1 cup chocolate chips
  • Optional: 1 teaspoon vanilla extract

Instructions

  1.  Preheat oven to 350 F.
  2. In a bowl, add mashed bananas, oats and cinnamon and mix well to combine. Fold in chocolate chips.
  3. Using a tablespoon, scoop mixture into heaping tablespoons onto a greased baking sheet (makes about 15 oaties). Bake in the preheated oven for 20 minutes.
  4. Store in an airtight container in the refrigerator or pantry for 3-5 days.
